Cimerio has 100% classic Montepulciano (del Conero) notes. Luminous, intense ruby red with purplish highlights. On the nose, well ripened sour cherry and floral scents of violets blend appealingly with more evolved tones and delicious hints of vanilla from fine grained oak, displaying superb length and maturation. The palate exhibits a consistent balance. Lean dryness and judicious tannins are perfectly balanced with alcohol, whilst rounded fruit notes create a velvety mouthfeel.

Vinification: The Montepulciano are carefully hand selected form the finest vineyards in the beautiful Rosso Conero area near Monte Conero on the Adriatic Coast. Close to the sea, the 8 to 30 year old vines are protected from the cold North winds. The grapes are vinified in cement vats with frequent daily pumpovers followed by lengthy maceration on the skins. The wine is then matured for 12 months in large Allier and Slavonian oak barrels and barriques, followed by bottle ageing in temperature-controlled storage.
